Shrimp Scampi-Caesar Romaine Salad
You know how you just get a craving for something, you know what you want it to taste like and you just make it. This was me the other day lunch. I wanted shrimp, I wanted a salad, and was craving the flavors of garlic and caesar. I craved this for about three days and finally gave into my craving. I made Shrimp Scampi-Caesar Romaine Salad. It’s sort of a mix between scampi shrimp and Caesar. It also has some versatility, you can cut the lettuce into wedges, wrap it, or cut it for an actual salad. Whatever you decide, give this recipe a try! It’s super easy and delicious.


Shrimp Scampi-Caesar Romaine Wedges
Ingredients
- 2 lbs Shrimp raw
- 1/2 cup Caesar Salad Dressing
- 1 pack McCormick Garlic Butter Shrimp Scampi Seasoning Mix
- 1 Lemon half for shrimp cooking & half for wedges
- 1 head Romaine Lettuce
- 1/4 cup Italian Cheese Blend finely shredded
- 1 tbsp Olive Oil
- Cracked Black Pepper
- Salt dash
Instructions
- Thaw and rinse shrimp well.
- Season with McCormick seasoning, cover and refrigerate for 30 minutes.
- Prep lettuce; Peel back lettuce leaves one by one, cut 1/4 inches off the ends of each leaf, rinse well, drain, and set aside. Use paper towel to drain excess water from leaves.
- Cook shrimp; Add olive oil to skillet, add shrimp, be sure that shrimp are evenly placed in skillet, squeeze a little lemon juice over shrimp while cooking, add cracked pepper and a dash of salt, cook for about 2 minutes on each side or until shrimp are slightly pink and opaque. *Do not over cook* Set shrimp and broth aside.
- Arrange lettuce on platter, top each leaf with shrimp, broth, and sprinkle cheese.
- Dip in Caesar dressing or top with dressing. Serve with lemon wedges. Pairs well with a baked potato.
