Chopped Kale & Mixed Greens Salad

Hey Friends!  So last night, I will admit I started dinner a little later than usual, but it was worth it.  I made the most delicious chopped salad recipe.  I made a kale, mixed green, and iceberg lettuce salad.  I will say that it was a hit. The bowl was clean and I actually made enough for another day.  I thought I would pop in today and share the recipe with you.  This is definitely a keeper and I plan on putting on my list of summer salad.

 

What you’ll need
Cherry Tomatoes
Iceberg Lettuce
Lemon
Garlic Clove
Olive Oil
Salt
Seedless Cucumbers
Panera Bread’s Fuji Apple Vinaigrette Dressing
Lemon-Honey Homemade Dressing (see recipe)
Cracked Pepper
Red Wine Vinegar
Red Onion
Green pepper
Kale
Mixed greens
Steps

Chop mixed greens & iceberg lettuce very small & add both to a strainer. Rinse and strain. Pour into a large bowl and set aside.

Add 2-3 leaves of kale to a separate bowl, rinse well and squeeze excess water out w/ a paper towel. Add to cutting board and chop into small pieces.

Tenderize kale by adding a drizzle of olive oil, dash of red wine vinegar, 1/2 tsp fresh lemon juice, & salt. Massage kale until softened.

Squeeze kale w/ paper towel to remove excess liquid.

Add to bowl of mixed greens and mix well with hand. Chop a small piece of green bell pepper and add to bowl. Mix well.

Chop a small amount of red onion and add to bowl. Mix well.

Add small chopped cherry tomatoes

Add small chopped cucumber

Add 1/2 garlic clove chopped small

Add dash of cracked pepper and salt & 1 tsp lemon juice and stir well.

For dressing, I like Panera Bread’s Fuji Apple or I make my own lemon-honey dressing.

Lemon-Honey Dressing: mix lemon juice, apple cider vinegar, honey, olive oil, salt, pepper)
